Easy-Peasy vanilla cupcakes
I have made these cupcakes hundreds of times; for a party, to cheer a friend up or just because I fancy something sweet with my cuppa. Usually, I skip the sifting as I am a lazy Llama but if you are out to impress with light fluffy cakes, sift away.
It is also worth, if possible, using an electrical whisk to ensure the ingredients are well combined.
This recipe makes about 12 buns or for an 20 cm sponge cake, use 175g of each ingredient and 3 eggs

Directions
1. Cream the butter and sugar together until you get a pale, fluffy mixture that drops off the spoon easily
2. Add the eggs and beat well, to make the buns extra tasty add a few drops on vanilla essence.
3. Sift the flour in for extra fluffy cakes
4. Put mixture into cake tin or bun cases and put in preheated oven for 20 minutes at 200c
