Fish Pie
320g to 350g of mixed fish – haddock, salmon, cod, etc.
2 potatoes
1 bay leaf
400ml milk
A teaspoon of peppercorns
A pinch of salt
A handful of fresh parsley or a table spoon of dried parsley
A garlic clove or a dollop of lazy garlic
Pepper
A teaspoon of nutmeg
75g butter
25g plain flour
Peel and dice potatoes and add to a pan of boiled water.
Melt a knob of butter in a pan and add a diced small onion and the garlic. Cook for 5 minutes till onion softens.
Pour in the milk and add the fish, a bay leaf, peppercorns, salt, ½ of the parsley.
Bring the milk to the boil then reduce the heat and simmer for 8 minutes.
Meanwhile, melt 50g of butter in a pan then add the flour and stir continuously to create a paste. Take off the heat and gradually add the poaching milk (not the fish) whilst mixing well until you have a smooth sauce. Remove from the heat, season with salt, pepper and nutmeg, then pour over the fish and mix together. Sprinkle the parsley on top.
Drain the potatoes then add a knob of butter and a splash of milk. Mash to how you desire.
Place a layer of mash potato over the fish. You can either top with either cheese, chives or more parsley. Put under the grill for 15 minutes then serve
