Chicken Soup
Ingredients
1 Small Chicken
2 Litres of warm water
4 Large Carrots
1 Large Onion
1 oz of long grain rice
Seasoning
Method
Place chicken, onion and carrots in warm water and bring to the boil.
Simmer for 1 1/2 hours
Remove chicken and alow to cool, approx 15 minutes
Remove fat off liquid and season to taste
Stir in the rice
When chicken has cooled, remove meat and chop into small pieces. Discard skin
Add chicken to liquid and simmer for another 20 minutes
